Brownie Waffles Ingredients:
- 1 heaping tablespoon sugar-free peanut butter
- 1 large extra-large egg
- 2 teaspoons cocoa powder
- 2 teaspoons monkfruit sweetener (optional)
- Pinch of salt
- 1 1/2 tablespoons sugar-free semi-sweet chocolate chips (divided)
- 1–2 teaspoons water, as needed
Instructions
- Prepare the Batter: In a bowl, mix together peanut butter, egg, cocoa powder, salt, sweetener, and 1 tablespoon of chocolate chips.
- Adjust Consistency: If needed, add 1-2 teaspoons of water to thin the batter.
- Preheat Waffle Maker: Preheat a mini waffle maker according to the manufacturer’s instructions.
- Cook the Waffles: Pour half of the batter into the waffle iron, sprinkle with remaining chocolate chips, and cook for 2-3 minutes until done. Repeat with the remaining batter.
