For The Chicken and Vegetables:

- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 red onion, diced
- 1 cup unsalted cashews
For The Marinade:
- 1/4 cup soy sauce
- 3 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
For Garnishing:
- Fresh cilantro, for garnish
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Make the Marinade: Mix soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger in a bowl.
- Marinate the Chicken: Coat chicken in the marinade and let sit for 15 minutes.
