Fresh Herb Blend:
- 1/4 cup fresh dill
- 1/4 cup fresh chives
- 1/4 cup fresh cilantro
Other Ingredients:
- 1/2 shallot
- 1/3 cup high-quality extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1/2 cup cottage cheese (such as Good Culture)
- 1/4 cup plain Greek yogurt (such as Greek God’s)
- 1/4 cup pasta water
- 1/2 cup freshly grated Parmesan cheese
- 1 tsp salt (adjust to taste)
- 1/2 tsp pepper (adjust to taste)
- 8 oz pasta, cooked al dente (such as Mafaldine)
Instructions
- Boil Pasta: Cook the pasta of your choice according to package instructions until al dente.
- Prepare Sauce: In a blender, combine the fresh herbs, shallot, olive oil, lemon juice, cottage cheese, Greek yogurt, salt, pepper, and pasta water. Blend until smooth and creamy. Adjust seasoning to taste.
- Combine: Heat the pasta sauce in a skillet over low heat. Add the cooked noodles and toss until well coated. Mix in the Parmesan cheese.
- Serve: Serve the pasta warm, garnished with extra Parmesan cheese if desired. Enjoy!
