  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ cup black beans (drained and rinsed)
  • ½ cup canned corn (drained)
  • ½ cup diced tomatoes
  • ¼ cup chopped fresh cilantro
  • ½ cup shredded cheese (cheddar or Mexican blend)

For Topping:

  • Plain Greek yogurt or sour cream, for topping (optional)

Instructions

  1. Preheat oven: Preheat to 400°F (200°C). Wash and pierce sweet potatoes, bake for 45–50 minutes.
  2. Saute filling: Heat oil in a skillet, cook onions until translucent. Add garlic, turkey, seasonings, beans, corn, and tomatoes; simmer.
  3. Prepare sweet potatoes: Slice each down the center, mash the flesh slightly to make space.
  4. Fill potatoes: Spoon turkey mixture into each sweet potato, top with cheese, bake for 5 minutes.
  5. Serve: Garnish with cilantro and yogurt or sour cream.
