Filling:
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 pound lean ground turkey
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- ½ cup black beans (drained and rinsed)
- ½ cup canned corn (drained)
- ½ cup diced tomatoes
- ¼ cup chopped fresh cilantro
- ½ cup shredded cheese (cheddar or Mexican blend)
For Topping:
- Plain Greek yogurt or sour cream, for topping (optional)
Instructions
- Preheat oven: Preheat to 400°F (200°C). Wash and pierce sweet potatoes, bake for 45–50 minutes.
- Saute filling: Heat oil in a skillet, cook onions until translucent. Add garlic, turkey, seasonings, beans, corn, and tomatoes; simmer.
- Prepare sweet potatoes: Slice each down the center, mash the flesh slightly to make space.
- Fill potatoes: Spoon turkey mixture into each sweet potato, top with cheese, bake for 5 minutes.
- Serve: Garnish with cilantro and yogurt or sour cream.
