Rolled Oats
- 1/2 cup (50g)
Almond Butter
- 1 cup (240g)
Honey
- 2 tbsp (42g)
Vanilla Protein Powder
- 1/4 cup (30g)
Peppermint Extract
- 1/4 tsp
Mini Dark Chocolate Chips
- 1/4 cup (40g)
Unsweetened Almond Milk (if needed)
- 1–2 tbsp (15-30ml)
Instructions
- Combine Ingredients: In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly.
- Add Almond Milk: If the mixture is too dry, add 1 tablespoon of almond milk at a time until desired consistency is reached.
- Fold in Chocolate Chips: Gently fold in the mini dark chocolate chips.
- Form Balls: Scoop out 1 tablespoon of the mixture and roll into a ball. Repeat.
- Chill: Place the protein balls on a baking sheet lined with parchment paper, then refrigerate for at least 20 minutes to firm up.
- Store: Store in an airtight container in the refrigerator for up to a week. Enjoy!
