Tofu:
- 1 block firm tofu (pressed and cubed)
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Stir-Fry:
- 8 ounces sliced mushrooms (cremini, shiitake, or button)
- 2 tablespoons vegetable oil (or sesame oil)
- 3 cloves garlic (minced)
- 1 teaspoon fresh ginger (grated)
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup or honey
- 1 teaspoon sesame oil
- 1 bell pepper (sliced)
- 1/2 cup snap peas
- 1/2 cup broccoli florets
- 1/2 teaspoon red pepper flakes (for heat)
Garnish:
- Sesame seeds
- Chopped green onions
Instructions
- Step 1: Prepare the Tofu Press tofu to remove moisture, cube, and coat with cornstarch.
- Step 2: Sauté the Mushrooms Cook mushrooms in oil until golden brown.
- Step 3: Crisp the Tofu Cook tofu until golden and crispy.
- Step 4: Add Vegetables & Aromatics Stir-fry veggies, garlic, and ginger.
- Step 5: Make the Sauce Whisk together soy sauce, vinegar, maple syrup, sesame oil, and cornstarch slurry. Pour over tofu and veggies.
- Step 6: Serve & Enjoy Garnish with sesame seeds and green onions. Serve over rice or noodles.
Notes
- You can customize the vegetables in this stir-fry based on your preferences or what you have on hand.
- Adjust the level of heat by adding more or less red pepper flakes.
