Tofu:

  • 1 block firm tofu (pressed and cubed)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Stir-Fry:

  • 8 ounces sliced mushrooms (cremini, shiitake, or button)
  • 2 tablespoons vegetable oil (or sesame oil)
  • 3 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon sesame oil
  • 1 bell pepper (sliced)
  • 1/2 cup snap peas
  • 1/2 cup broccoli florets
  • 1/2 teaspoon red pepper flakes (for heat)

Garnish:

  • Sesame seeds
  • Chopped green onions

Instructions

  1. Step 1: Prepare the Tofu Press tofu to remove moisture, cube, and coat with cornstarch.
  2. Step 2: Sauté the Mushrooms Cook mushrooms in oil until golden brown.
  3. Step 3: Crisp the Tofu Cook tofu until golden and crispy.
  4. Step 4: Add Vegetables & Aromatics Stir-fry veggies, garlic, and ginger.
  5. Step 5: Make the Sauce Whisk together soy sauce, vinegar, maple syrup, sesame oil, and cornstarch slurry. Pour over tofu and veggies.
  6. Step 6: Serve & Enjoy Garnish with sesame seeds and green onions. Serve over rice or noodles.

  • You can customize the vegetables in this stir-fry based on your preferences or what you have on hand.
  • Adjust the level of heat by adding more or less red pepper flakes.
